A well-established, premium modern pub recognised as one of the city’s enduring hospitality institutions is seeking an accomplished Senior Sous Chef to take on a pivotal leadership role within its kitchen brigade.
The venue enjoys strong weekday patronage from the corporate market, steady weekend trade and a full calendar of private functions and events. The menu showcases elevated pub favourites complemented by refined, contemporary touches, delivering food that is polished, consistent and widely appealing.

The kitchen itself is contemporary, highly organised and led by an experienced management team. This is a disciplined, standards-focused environment where quality, consistency and professionalism are expected at every service.
The Role
This is a hands-on leadership position — very much the engine room of the kitchen.
You will oversee a key section of the kitchen, leading service, maintaining high preparation standards and ensuring seamless execution across both lunch and dinner. The environment demands efficiency, structure and unwavering consistency at every stage of service.
Responsibilities include:
- Running service at volume with calm control
- Managing prep levels, ordering and supplier relationships
- Coordinating function run sheets and event preparation
- Maintaining quality control and recipe consistency
- Supporting labour and food cost targets
- Leading and mentoring a team of approximately six chefs within a larger brigade
You will work closely with the Head Chef and senior leadership team, helping maintain standards while strengthening systems and day-to-day structure.
About You
- Has strong experience in high-volume pub, bistro or large-format venues
- Understands the pace and expectations of a busy trade
- Is organised, commercially aware and confident managing ordering and prep systems
- Leads from the front during service
- Values professionalism, structure and consistency
- Is confident collaborating within an experienced and skilled kitchen team
