The Beverage Program

Agave is at the core of the program. Think bold tequilas, smoky mezcals, and cocktails that go beyond the expected. Add in smart batching systems, fresh infusions, and local wines and beers, and you’ve got the foundation for a beverage identity that can evolve with the venues and the team.

Menus will reflect each site’s uniqueness, with consistency and profitability reinforced through robust systems, expert training, and strong supplier partnerships.

Your Role

This newly created position spans three key venues with more on the roadmap. You’ll guide the creative and operational side of the drinks offering, shape guest engagement, and lead a confident, service-driven bar culture.

  • Design venue-specific drinks menus that align with food and clientele
  • Lead and expand the group’s tequila and mezcal focus through education and events
  • Standardise recipes and roll out batching systems to balance consistency and speed
  • Train and mentor bar and FOH staff in cocktails, spirits, wine and guest engagement
  • Work closely with the Head Chef on food pairings and seasonal offerings
  • Oversee beverage stock, GP performance, and supplier relations
  • Act as a visible leader across venues, especially during training and rollout phases

What You Bring

  • Strong knowledge of tequila, mezcal, and cocktail trends
  • Previous bar management or group beverage experience in a high-volume venue
  • Passion for staff training and ability to lead by example
  • Commercial understanding of cost control and supplier management
  • A collaborative, professional style with excellent communication skills
