The Venue

This is a Sydney institution, a well-known restaurant located in the heart of the CBD that is newly refurbished. A fresh new take on the concept, culture and experience is what it’s all about – out with the old, in with the new!

Closed Monday’s and Tuesdays and serving dinner Wednesday to Sunday and lunch Friday to Sunday. This venue is in a league of its own. The menu (classic meets new world) is Degustation only with matching wines to compliment each course. The service is sleek, polished, professional, yet personable and warm. The wine list is never ending and the matching wine options perfectly finish off each bite. Every element has been thought about with care and intent to please.

You’ll be working with an award-winning wine list, over 400 bins, a mixture of European classics with New World contemporaries.

The Role

As Sommelier, you’ll be an extension of the Head Sommelier. Joining and assisting with the wine program, schmoozing regulars while maintaining a first-class style of service.

This is a chance for a Junior Sommelier or wine enthusiast to step up and be mentored, or a chance for a strong Sommelier to take the reins and enjoy a hands-on, very little admin and service focused role. It’s all about leading from the front and being a strong presence on the floor.

The clientele are there for the whole experience – the degustation menu matched with the perfect wine. It’s about creating a personalised service and a memorable experience for the diners, with your explanation on why that particular wine is matched with that course and taking them along on that journey with you.

It’s a chance to really develop your knowledge and apply it with every table you touch.

The Required Experience

Having a presence and a good hands-on approach to working as part of a team is ideal. Also important is having positive energy and stacks of confidence.

Ideally, you’ll be someone who always remains calm in any situation and is a natural motivator and of course has a passion for wine!

Wine knowledge is key to this role, as well as great organisational skills and communication skills.


The tips are incredible and consistent, ranging from $300-$500 a week.

You will be working in one of the most established and prominent venues in town that rewards your efforts well.

Salary range is up to $70K+ Super + Tips, depending on experience, plus a work-life balance of less than 50 hours a week with flexible roster.
