The Venue

This is a Sydney institution, a well-known restaurant located in the heart of the CBD. Classically styled with a definite contemporary European theme and quality fit out.

They offer lunch and dinner Mondays to Saturdays with Sundays as day off. The clientele is corporate but very loyal with lots of regulars. Excellent and warm service, run by passionate and hands-on owners.

This is a highly professional environment which offers the candidate the chance to work within a very rewarding company. You’ll be working with an award-winning 3 wine goblet list, over 400 bins, a mixture of European classics with New World contemporaries.

The Role

As Head Sommelier, you’ll be an extension of the owner-operators. Running the wine program, schmoozing regulars while maintaining a first-class style of service.

This is a chance for an Junior Sommelier or wine enthusiast to step up and be mentored by the owners who are extremely passionate. This is also a chance for a strong Sommelier to take the reins and enjoy a hands-on, very little admin and service focused role. It’s all about leading from the front and being a strong presence on the floor.

The clientele are some of the heavy hitters of Sydney’s corporate world, so being able to talk the talk and walk the walk is important. These are the sort of people with their own wine cellars and know what they like, so it’s in your best interest to win them over with your savvy charm and thorough wine knowledge.

Taking charge of the award-winning wine list, you will be the envy of all your sommelier friends. Control of purchasing, meeting with reps and stock control will play a big part of the role. The position will also require a significant amount of in-house training, where you’ll be expected to teach and mentor the floor team.

In addition to this, we are looking for a someone who really embodies “hospitality” and creates that sense of warmth and inviting atmosphere.

The Required Experience

Ideally, you’ll have a presence and a good sense of restaurant management as you’ll be required to host and float the restaurant floor in addition to wine duties. Having positive energy and stacks of confidence is highly important.

You’ll need to be someone who always remains calm in any situation and is a natural motivator and of course has a passion for wine!

Exceptional wine knowledge is key to this role, as well as great organisational skills and communication skills.


First of all, the tips are incredible and consistent, ranging from $400-$800 a week. Also, you’re not only working in one of the most established and prominent venues in town, but you’ll be well rewarded for your efforts.

Salary range is up to $75K+ Super + Tips, depending on experience, plus a work-life balance of less than 50 hours a week with Sundays off.
