The venue is a modern well-equipped restaurant with a very stable kitchen brigade. The owners are known to look after their staff. Many have been there for over ten years – you don’t hear that very often these days.
Being a very busy restaurant, you to need to be highly organised for this role. You also have to be calm and an in-control operator that can lead this mid-size stable team. The team members are of all ages and come from many corners of the world so having experience in leading a diverse team is important for this role.
Training and Delegation
We have a very strong team that works well together. There are very few issues with this kitchen. The team knows what to do, and generally gets on with it and does it. That said, keeping the level of contentment and productivity takes a special type of leader. We need a sous chef that will be in there in the kitchen, checking, rechecking and showing the younger chefs how it should be done.
You will be comfortable with all areas of the kitchen and ideally have strong wok skills. You will be learning all areas of the kitchen, and after training, you will move to more management with a few shifts a week on sections.
While you don’t have to know all areas and parts of the cuisine, you will need to have experience with volume (200 pax a service) and strong in Asian cuisine.
People Skills and Leadership
We are looking for someone who is a calm, intelligent sous chef who leads from the front and can effectively communicate with all types of people. This is an established kitchen and business that is running well so we are looking for a “slowly slowly” approach to any change.
As an indication, you will be looking at a salary of between $65K+S and 80K+S depending on experience. Work hours would generally be around 45-50 hours/week.
